Satisfy your cravings for crunchy, creamy, chocolate-nutty, goodness with this messy-hands recipe that will leave you licking your fingers.
This recipe makes about 10 clusters.
Ingredients:
Don’t have cacao powder or liquid sweetener? Replace the two with 1/2 cup of chocolate chips and just melt them in with the peanut butter.
Instructions:
Crumble up the rice cakes into a bowl and mix in the 1/2 cup of your favorite personalized touch. In a pan over low heat, melt the peanut butter and sweetener together. Mix half of the cacao powder (1 Tbsp) into the crumbled rice cakes and the other half (1Tbsp) into the melting pan with the peanut butter and sweetener. Once the peanut butter mix is fluid, pour it over top of the crumbled rice cakes. Be sure the mixture is not too hot, then use your hands to mix it all together. Pick up a handful and squeeze it in your palm to create your cluster. Place clusters in the freezer for 25 minutes to settle. Enjoy the crunchy, creamy, chocolate-nutty, goodness! Store in the freezer for a fun treat.
Personalize it!
Make these your own by adding in your favorite treat: chocolate chips, sprinkles, dark chocolate chunks (my favorite), white chocolate pieces, peanuts, m&ms, raisins, dried fruits (blueberries, cherries, cranberries, etc), and/or nut pieces. Your options are limitless! You can finish them off with a dusting of powdered sugar or even dunk them into melted chocolate for a decadent chocolate-covered peanut butter cluster!
