During those summer BBQ’s, vegetarians need to be sure they get their protein in their meal! Often vegetarian burger patties do not have much protein in them so, this refreshing salad is the perfect side dish to go along with your portobello burger or garden patty.
All you need is to toss together the following ingredients:
Makes about 5-6 servings and leftovers keep well in the fridge!
Often when I make this recipe I will use frozen peas and frozen edamame. I will toss them in with the quinoa as it is cooling to allow the quinoa to cool a little quicker. Also, the warmth of the quinoa helps to thaw out the frozen peas and edamame. Once they have all come to the same temperature, I will toss in the remaining ingredients. Helps to speed up the process a bit and frozen peas and edamame are just so easy to have on hand in the freezer. Makes it an easy, fulfilling salad for any time of year, not just during those summer BBQ’s!
